The balsamic in this recipe gives a sweet taste while the herbs along with the chicken make for a savory dinner that is healthy and great for weight loss, and stabilizing blood sugars. ┬áMakes: 4 servings – Serving equals: 3 oz. protein

  • 2 tsp. olive oil
  • 1/2 small red onion, chopped
  • 2 tsp. fresh thyme, minced (or 1 1/4 tsp. dried thyme)
  • 4 chicken breast halves, boneless
  • 1/3 cup 100% fruit blackberry spread (seedless and sugar-free)
  • 1 T. balsamic vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

In a large frying pan heat oil on medium. Add onion and thyme. Cook 5 minutes, stirring. Add chicken and cook 4 minutes, turning one time. Add the remaining ingredients and stir until blackberry spread is dissolved. Cover, reduce heat to low, and continue cooking for 10 minutes.
