Cioppino for Health

This recipe has the warmth you crave in comfort food and the protein you need to keep your blood sugar level stable which produces weight loss and is great to for diabetics! Makes 2 servings 1 cup serving = 3 oz. protein
- 1 cup fat-free/low-sodium chicken broth
- 1 small can stewed tomatoes
- 2 Tbsp lemon juice
- 3 Tbsp clam juice (low-sodium)
- 1 Tbsp onion, minced
- 1 tsp paprika
- 1 bay leaf
- ½ tsp red pepper flakes
- 1 tsp each garlic, thyme, oregano, basil
- 2 Tbsp red bell pepper, diced
- 2 Tbsp green bell pepper, diced
- 6 oz. seafood (shrimp, clams and white fish)
- Fresh parsley, chopped, for garnish
In a stock pot combine the broth, tomato, lemon juice, clam juice, onion, paprika, bay leaf, red pepper flakes, garlic, thyme, oregano and basil. Cover, simmer for 15 minutes. Stir in red and green bell pepper and seafood. Cover and simmer for 4 – 5 minutes. Garnish with parsley.
