Sauté Ginger Vegetables

One of the best things about cooking with ginger is the aroma of sweet and spicy that fills air. This compound is called gingerol.

Ingredients:

½ head cabbage, thinly sliced

½ white onion, thinly sliced

2 red bell peppers, match stick style

1 carrot, match stick style

4 cloves garlic, minced, or 1 Tbsp granulated garlic, more for garlic lovers

2 knobs ginger grated (typically 1-inch pieces)

Salt and pepper to taste

Oil per preference

White vinegar

How To:

Heat a large pot over medium heat, add 1 Tbsp oil. Once oil is warmed up, add onion, peppers, carrots and sauté till they become limp. Add in garlic, ginger and cabbage and sauté till cabbage wilts. Add salt and pepper to taste.

This is great for any meal! Serve at breakfast with scramble eggs, or dinner with a spiced ground turkey. Brown rice makes a great add as well. Top with cilantro, pickled items, green onions, sesame seeds or drizzle the veggies with white vinegar.
