A hearty salad that fills you up and is at the same time healthy, low fat and low in carbs… perfect for weight loss, those with diabetes, and those who just want to feel good by making healthy choices. ┬áMakes: 1 serving – Serving equals: 1 B starch, 1/4 fruit, 1/2 tsp. oil

  • 1 cup quinoa
  • 2 cups water
  • 2 tsp. sesame oil
  • 3 scallions
  • 1/2 cup tangerine or mandarin orange sections
  • 2T. fresh mint leaves, chopped
  • 2 tsp. orange zest grated

Combine quinoa and water in a large saucepan and bring to a boil. Reduce the heat, cover and simmer for 15 minutes. Remove pan from heat and spread the mixture out on a baking sheet. Let it cool completely. In large bowl, combine the quinoa with all the remaining ingredients. Toss gently and serve.
