Healthy Roasted Beef & Apple Kabobs


You will love this delicious summer-time, BBQ dish made with fresh, healthy ingredients. Chicken or beef is marinated in broth, vinegar & spices, layered on skewers with onions and apples and then cooked on a grill until done. Great Paleo recipe with no carbs and high in protein. Makes 4 servings 1 serving = 4 oz. protein and ½ fruit

  • 1 lb. lean beef (or chicken)
  • 2 apples, cut into large chunks
  • Onion petals
  • 1 cup low-sodium/fat-free broth
  • 3 Tbsp apple cider vinegar
  • 1 Tbsp Bragg Liquid Aminos
  • Stevia to taste

Marinate meat in broth, vinegar and spices. Layer the apple, onion petals, and meat chunks onto skewers. Barbecue directly on grill or you may place a piece of aluminum foil sheet and cook until desired level of doneness. Baste frequently with remaining marinade. Heat the remaining marinade and use a dipping sauce.
