Roasted Broccolini with Pears and Parmesan -Reggiano

If you are not a broccoli lover then go for broccolini, it is sweeter and more delicate.

This recipe is very simple and so delicious. The trick is not cooking the pears but just tossing them with the cooked broccolini to warm them up. Make sure you get Parmesan-Reggiano, it has a complex flavor, where just a little can make the dish pop. Who knew pears and broccolini would pair!

Ingredients:

2 bunches broccolini, ends trimmed (or 1 pound broccoli, thinly sliced lengthwise, stem and all)

2 Pears, semi soft, sliced

Parmesan-Reggiano for grating

Preferred roasting oil…not coconut

How to:

Heat oven to 425 degrees. Prep all ingredients as listed above.

In a baking dish, toss broccolini in roasting oil. Roast broccolini until it becomes a bright green color, generally 15-20 minutes.

Remove broccolini from oven and toss the sliced pears with broccolini.

Plate broccolini and shave parmesan to desired quantity. Just remember a little goes a long way.

Recipe counts: 1/2 fruit, 1/2 fat. Don’t forget to count your veggies!
